Sweet Heat Chicken Biscuit

Our Friends at It's a Southern Thing developed this delicious and simple Sweet Heat Chicken Biscuit Recipe for us.

Ingredients:

  • 1 bag of House-Autry Spicy Chicken Mix

  • Chicken tenders (1 per biscuit)

  • 2 eggs

  • Peanut oil

  • Biscuits of your choice

  • Pimento cheese

  • Bacon (1 piece per biscuit)

  • Brown sugar

Preparation

Biscuit prep
Do you know how to make biscuits from scratch? Amazing! Do you prefer boxed mix? Great! Do you already have a can in the fridge? We won’t judge. I pulled some out of the freezer. You know what to do.


Bacon prep
Cover a baking pan in aluminum foil (super easy clean up) and preheat your oven to 350 degrees. If your biscuits need to be at 375, then that works too. The bacon can be pretty forgiving as long as you keep an eye on it. I like to lay the strips out on wax paper first to coat the tops with brown sugar before transferring to the foil so I don’t end up with too much of a melted sugar mess in the pan. Bake for approximately 20-25 minutes, longer for thick-cut pieces. It may not look as “done” as it does coming from the stovetop, but it’ll darken as it cools and this type tastes better chewy than too crispy. Use tongs to carefully lift each strip and allow the excess caramelized sugar to drip off onto the foil. Lay the strips sticky side up on a plate, or another piece of wax paper, to cool. We’ll cut them later so they fit on the biscuits.


Chicken prep
Fill your deep fryer with peanut oil and preheat it to 350 degrees. (If you don’t have a deep fryer, you can use a dutch oven with an oil thermometer.) I cut my tenders in half for optimal biscuit coverage, so they fry quickly. Pour your House-Autry Spicy Chicken Mix into a large bowl and coat the chicken by rolling tenders on all sides until well-covered. The more mix, the better! So crack those eggs into a bowl, whip ’em up, and then dip your tenders in before tossing them back into the mix for a second coat! Deep fry in oil for 4-6 minutes, depending on how big they are, and then carefully remove and set on a couple paper towels to soak up the oil.


Time to put this puzzle together!
Cut your nonjudged biscuits in half and your bacon into thirds. Plunk a little pimento cheese onto each biscuit half to hold your toppings in place, top with your candied bacon and fried chicken, and enjoy with a glass of ice-cold sweet tea!
