- 2 cups milk
- 1 1/2 cups chicken broth
- 1 cup House-Autry’s White Stone Grits
- 1/4 cup butter
- 1/4 cup green onions
- 2 cups sharp cheddar cheese
- 4 oz cream cheese
- 10 oz can tomatoes with chilies
- 2 eggs
Step OnePreheat oven to 350 degrees.
Step TwoAdd milk and chicken broth to large sauce pan. Bring to a boil. Add grits. Cover and cook on low heat for 6 minutes. Stir grits every few minutes while cooking.
Step ThreeAdd butter and cook an additional 4 minutes uncovered, stirring continuously.
Step FourAdd in cream cheese. Stir until melted. Remove from heat.
Step FiveBeat eggs.
Step SixAdd eggs, 1 cup of cheddar, tomatoes with chilies, and green onions and mix well.
Step SevenAdd grits to a greased 8 x 11 x 2in casserole baking dish.
Step EightTop casserole with remaining 1 cup of cheddar cheese. Bake for 40 minutes.
Step NineCool down 5 minutes before serving.
