Cheddar Cheese Grit Cakes

      

Ingredients

Original Recipe

  • 4 cups of water
  • 1 cups of grits
  • 1 tsp of Salt
  • 2 cups shredded sharp cheddar cheese
  • Salt & Pepper to taste

5lb. Recipe

  • 1 Bag of HA grits
  • 2.2 Gallons of water (1.0625 gallons or 17 cups)
  • 8 1/2 tsp of Salt (4 ¼ tsp)
  • 17 cups shredded sharp cheddar cheese (8.5c cheese)
  • Salt & Pepper to taste

      Directions

      • Step One

        Bring water and salt to a boil.
      • Step Two

        Slowly stir in grits and cook, covered, on low to medium heat, stirring often for 12-15 minutes.
        Mix in cheese when the grits are almost done.
      • Step Three

        Coat a 6-cup muffin pan with cooking spray.
      • Step Four

        Spoon ¼ ups of grits into each cup, pat down to smooth top.
      • Step Five

        Cover and chill at least 4 hours.
      • Step Six

        Remove cakes from pan and season with salt and pepper.
      • Step Seven

        Fry in a large skillet with oil over medium-high heat 3 minutes on each side or until golden brown.
