- 6 chicken wings, separated at the joint (12 total pieces)
- kosher salt
- 2 tablespoons canola oil
- ¼ cup clarified butter
- 1 teaspoon ghost chili sauce (found online or at specialty stores)
- ½ cup Frank's or other hot sauce (Captains Ghost Pepper Hot Sauce)
Step OneSeason the chicken wings lightly with Kosher salt.
Step TwoHeat the canola oil in a large non-stick skillet over medium high heat and pan-fry the chicken wings for 10-12 minutes, or until browned and cooked through.
Step ThreeMelt the butter for 10 seconds in the microwave to avoid butter explosions, then add to ghost pepper sauce and hot sauce in a very large mixing bowl.
Step FourCarefully toss to coat (you do not want this sauce landing anywhere unexpected) and serve with dipping sauce.
