Filled with spinach, blue cheese and garlic, these stuffed mushrooms make a great appetizer or side dish.
- 1/4 cup House-Autry Pork Seasoned Breading Mix
- 24 large fresh mushrooms
- 1 clove garlic
- 1/4 cup butter
- 1 cup chopped spinach - fresh or frozen
- 1/2 cup crumbled blue cheese
Wash and drain mushrooms. Remove stems. Reserve caps. Chop enough stems to make 1 cup. In medium saucepan, cook stems, onion, garlic and spinach in butter until tender. Stir in breading mix and cheese. Spoon mixture into mushroom caps. Arrange mushrooms in a 15x10x1-inch baking dish. Bake in a preheated 425°F oven for 8 to 10 minutes or until heated through.
