Jalapeno Hushpoppers

Southern Spoon Bread
A cross between cornbread and corn pudding, this dish makes a great side for just about any entrée.
Preheat oven to 400°F. In a saucepan, mix the milk and House-Autry Yellow Plain Corn Meal together. Scald and cook in top of a double boiler until it reaches the consistency of this mush (about5 minutes). Add the butter and salt. Slowly fold in the eggs. Pour into a greased 1 1/2-quart baking dish. Bake for 45 minutes. Serve at once from pan in which it was baked.
*Your eggs will cook, and look like scrambled eggs if you add them all at once to the corn meal mixture. Make sure that you "temper" them. Here's how: Remove about a cup of the cooked corn meal mixture from the saucepan and place it into a small bowl. Whisk the eggs into the cup of corn meal, then pour it back into the remaining corn meal that's on the stove. Mix well, and pour into prepared pan.
