Canned salmon and our seafood seasoned breading mix make for salmon burgers with flavor and pizazz.
- 1/4 cup House-Autry Seafood Seasoned Breading Mix (plus more for coating outsides)
- 1 (14oz) can salmon, drained, bones and skin removed
- 1 large egg, beaten
- 2 tbsp mayonnaise
- 2 tbsp scallions, minced
- 1 tbsp dijon mustard
- 4 crusty rolls, split in half
- Optional burger toppings: lettuce, red onion, provolone cheese and dijon roasted garlic mayonnaise (recipe below)
Combine salmon, House-Autry Seafood Seasoned Breading Mix, egg, mayonnaise, scallions and mustard until thoroughly mixed. Shape into 4 patties and coat with additional House-Autry Seafood Seasoned Breading Mix. Cook in 1/8-inch hot oil for approximately 5 minutes, turning halfway through cooking. Place cooked salmon cake on a roll; top with your choice of condiments and enjoy! Serve with vegetable chips.
Dijon Roasted Garlic Mayonnaise: Combine 2 tbsp roasted garlic, 1 tablespoon Dijon mustard and 1 cup mayonnaise until smooth. Season with salt and pepper to taste.
