Pumpkin Streusel Muffins

These flavorful, moist muffins are a great breakfast, snack or dessert, and they’re easy to make with House-Autry Buttermilk Biscuit Mix.

Ingredients

  • 2 cups House-Autry Buttermilk Biscuit Mix
  • 1 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 1 1/4 cup sugar
  • 1/3 cup oil
  • 2 eggs, large
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 3 tbsp butter, softened

Directions

Preheat oven to 350°F and place cupcake liners in a muffin pan.

Prepare muffin mix. Combine biscuit mix, salt, pumpkin pie spice and cinnamon, and set aside. In a separate large bowl, combine pumpkin, sugar, oil and eggs, and whisk together thoroughly. Pour dry mix into wet mix and stir. Set aside.

For the streusel topping, mix ingredients in a small bowl until crumbly.

Divide batter into liners, about 1/3 cup each for standard size pan. Sprinkle with streusel topping.

Bake 15 to 20 minutes or until a toothpick inserted in center comes out clean.

Cool completely and serve. If storing, place in an airtight container.
