Corn Meal Gingerbread with Lemon Sauce
A light, lemony sauce perfectly complements this gingerbread, made with our self-rising corn meal mix.
Preheat oven to 350°F. Lightly grease an 8x8-inch baking pan. Whisk together corn meal mix and spices; set aside. Cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Beat in the molasses. Add half of the corn meal mixture; beat until smooth. Add half of the warm milk; mix well. Add remaining corn meal mixture; beat until smooth. Add remaining milk; mix well. Pour batter into prepared pan. Bake 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Gingerbread is the perfect treat to serve around the holidays - the spices will fill your house with a wonderful warm smell.
Meal Suggestion: For a delicious lemon sauce to go with the gingerbread, mix 1 cup of powdered sugar with 2 tablespoons lemon juice. Adjust the thickness to your liking with more or less lemon juice. Adding a sprinkle of powdered sugar makes it even more delicious.
