Our hushpuppy mix with onion gives great flavor and texture to this versatile breakfast casserole.
- 1 cup House-Autry Hushpuppy Mix with Onion
- 1 pound sausage - cooked drained and crumbled
- 6 eggs - beaten
- 1 cup shredded sharp cheddar cheese
- 3 cups milk
- 1 tsp salt
- 1 1/4 tsp dry mustard
- 1/2 tsp black pepper
- 2 tbsp sour cream
Preheat oven to 350°F. Lightly grease the bottom of a 9x13-inch baking dish. Distribute the cooked sausage evenly in the bottom of dish. In a large cup, mix House-Autry Onion Hushpuppy Mix, 1 cup milk, sour cream and 1/4 teaspoon dry mustard. In a separate bowl, combine eggs, cheese, 2 cups milk, salt, 1 teaspoon dry mustard and pepper; stir well. Pour egg mixture on top of sausage. Pour hushpuppy mixture evenly over casserole. Bake casserole for 40 to 45 minutes or until eggs are set.
