Baked Chicken Casserole

Baked Chicken Casserole
Everyone loves a good casserole! This one uses chicken, pasta, a variety of seasonings, and House-Autry Oven-Baked Chicken Seasoned Coating Mix for texture and flavor.
- 6 ounces House-Autry Oven-Baked Chicken Seasoned Coating Mix
- 2 cans chunk chicken breast - drained
- 1 tsp chili powder
- 8 ounces fresh mushrooms - sliced
- 1 tbsp garlic powder
- 1 medium onion - chopped
- 4 tbsp butter
- 1/2 cup celery
- 1 can cream of mushroom soup
- 3 cups cheddar cheese - grated
- 12 ounce package egg noodles
- 2 tsp salt
- 1/2 cup sour cream
- 1 cup potato chips - crushed
- Salt and pepper to taste
Preheat oven to 400°F. Place 3 ounces (1/2 package) House-Autry Oven-Baked Chicken Seasoned Coating Mix, chili powder and chicken in a resealable plastic bag; shake to coat. Place coated chicken into a 4-quart baking dish that has been lightly coated with butter. Place in oven and cook 10-12 minutes, or until chicken coating begins to turn golden.
Meanwhile, bring 2-3 quarts of salted water to a boil; add noodles and cook until just before al dente. Drain and set aside. In a small skillet, melt 1 tbsp butter over medium heat. Add mushrooms and garlic; sauté for 2-3 minutes; set aside. Heat 2 tablespoons of butter; add onions and celery, and cook until onions are translucent and celery is tender.
Combine the cooked vegetables, pasta, mushroom soup, sour cream and cream with 2 cups grated cheese; mix well. Salt and pepper to taste. Pour mixture into casserole dish with chicken. Cover the casserole evenly with remaining cheddar cheese. Dust with chili powder. Mix remaining House-Autry Oven-Baked Chicken Seasoned Coating Mix and crushed potato chips together; sprinkle over the top evenly. Cook 20-25 minutes, or until topping is nicely browned. Allow casserole to set for at least 8 minutes before serving.
