Sweet Thai Chili Chicken with Sesame Green Beans and Rice

Ingredients

Chicken

Boneless Skinless Chicken Breasts
1 large egg
1 Tbsp. water
1 Box House Autry Flavor Expressions Sweet Thai Chili Seasoned Coating Mix- 2 pouches

 

Sesame Green Beans

1.5 lbs fresh green beans
2 Tbsp. olive oil
1/2 tsp. Kosher salt
1/4 tsp. pepper
1 garlic clove, chopped
1 tsp toasted sesame oil
1 tsp sesame seeds

 

Rice

1 cup basmati rice
2 cups cool tap water
Store bought Sweet Thai Chili Sauce for serving

Preparation 

Chicken

  1. Preheat the oven to 400 degrees.
  2. In a shallow bowl, whisk together 1 egg and 1 Tbsp. water to make an egg wash. In another shallow bowl, add the Sweet Thai Chili Seasoned Coating Mix.
  3. Lightly pound your chicken breasts so that they are even thickness from end to end. This will ensure even cooking.
  4. Dip the chicken breasts in the egg wash. Shake off the excess. Roll the chicken in the coating mix, lightly pressing to ensure maximum adhesion.
  5. Place the coated chicken on a foiled lined baking sheet. Bake at 400 degrees until cooked through - Approx. 20 minutes. (internal temp should register 165 degrees with an instant read thermometer). Remove from the oven.

Sesame Green Beans

  1. In a non-stick skillet over medium heat add the olive oil, once it is hot add the green beans. Saute for about 5 minutes until they are starting to soften slightly.
  2. Add the kosher salt, pepper, sesame oil, and garlic. Saute another 1 minute. Remove from the heat and serve.

Rice

  1. Place the rice and water in a medium sized saucepan over medium high heat. Bring the pot to a boil.
  2. Once it boils pop the lid on and turn the heat down to low. Cook for 13 minutes with the lid on, do not peek! Remove from the heat and let sit for 5 minutes with the lid on.
  3. Remove the lid, fluff with a fork. Serve with a drizzle of Sweet Thai Chili Sauce.
