Zucchini Rollatini with Smoked Tomato Sauce

Thinly sliced zucchini is coated in our seasoned breading mix, filled with cheese and herbs, then baked for and Italian meal with flair.

Ingredients

  • 1/2 cup House-Autry Chicken Seasoned Breading Mix
  • 2 eggs, lightly beaten
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2/3 cup grated parmesan cheese (additional)
  • 2 medium zucchini
  • 2 cups grated mozzarella
  • 1 cup ricotta cheese
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh oregano, chopped
  • 3 cups prepared tomato sauce (homemade or purchased)
  • 2 tsp smoked paprika

Directions

Preheat oven to 350°F and lightly oil two baking sheets. Place House-Autry Chicken Breader and eggs in two shallow bowls or pie plates. In a third bowl, mix together breadcrumbs and 1/2 cup parmesan cheese; salt and pepper to taste. Cut zucchini lengthwise into 1/8 to 1/4-inch slices. Dredge slices in House-Autry Chicken Breader, eggs and then crumb mixture. Place on prepared baking sheets. Bake 30 minutes, turning once halfway through baking time. Remove from oven and let rest 10 minutes. In medium bowl, mix together mozzarella, ricotta, mint, basil and oregano; salt and pepper to taste. In separete bowl, mix together tomato sauce and smoked paprika. Spread 1 cup tomato sauce on the bottom of a lightly oiled 8 x 8-inch baking dish. Place a small amount of cheese mixture at the end of a zucchini slice. Roll up the slice and place seam-side down in the baking dish. Repeat with remaining zucchini and filling. Spoon remaining sauce over rolls an top with remaining 2/3 cup parmesan cheese. Return to oven and bake 30 minutes, or until cheese is melted.
