Yummy Fried Cheese Sticks

Freezing the cheese slightly will keep it from seeping out during cooking. There are a variety of excellent cheese sticks on the market - cheddar, mozzarella, colby, etc. I like to use string cheese. It has a delicate flavor that tastes great with our Onion Hushpuppy Mix. Use whichever cheese you prefer. This recipe works equally well with House-Autry Plain Hushpuppy mix, too.

Hushpuppy Mix with Onion
Ingredients
1 (9-ounce) package cheese sticks
3/4 cup plus 1 tbsp water
24 toothpicks
Directions: 

Remove wrappers from cheese sticks and cut in half diagonally. Place in a small resealable plastic baggie and freeze for 1/2 hour.
Remove baggie of cheese from freezer and add 2 tbsp House-Autry Hushpuppy Mix. Seal and shake to coat. Place remaining House-Autry Hushpuppy Mix into a small mixing bowl; add water and stir until well blended. Let mixture sit for 5 minutes.

Working in batches, remove 3 or 4 pieces of cheese from baggie. Dredge in hushpuppy/water mixture, coating thoroughly. Using a toothpick, skewer a piece of cheese; lightly shake off excess batter and drop into oil that has been heated to 350°F. Fry for 2-2 1/2 minutes, turning halfway through cooking. Gently remove fried cheese and drain on paper towels. Repeat procedure with remaining cheese.

Remove toothpicks before serving. Makes 24 pieces.

Serve with marinara or your favorite dipping sauce.
