Swiss Brunch Surprise

Ham and Swiss cheese make this breakfast or brunch dish hearty, filling and slightly decadent.

Ingredients

  • 3/4 cup House-Autry Yellow Plain Corn Meal
  • 3/4 tsp baking soda
  • 2 tbsp butter
  • 3/4 cup buttermilk
  • 3 egg yolks, slightly beaten
  • 3 egg whites, stiffly beaten
  • 1 cup cooked ham, diced
  • 2 swiss cheese, grated

Directions

Preheat oven to 375 degrees F. Grease a 2-quart casserole on bottom only and place in a pan of hot water to preheat. Blend House-Autry Yellow Plain Corn Meal, baking soda and salt. Add boiling water slowly, stirring until a mush is formed. Add butter, then cool slightly. Blend in buttermilk and beaten egg yolks. Carefully fold in stiffly beaten egg whites, ham and cheese. Bake approximately 45 minutes, until a knife inserted halfway between the center and outside edge comes out clean.
