Sweet Potato Biscuits

For a twist on regular biscuits, try this recipe, using mashed sweet potatoes, orange juice and brown sugar—and of course, House-Autry Buttermilk Biscuit Mix!

Ingredients

  • 1 box (1 3/4 cups) House-Autry Buttermilk Biscuit Mix
  • 1/4 tsp nutmeg
  • 3/4 tsp cinnamon
  • 1 cup sweet potatoes - mashed
  • 3 tbsp brown sugar
  • 1/4 cup pecans or raisins - optional
  • 1-2 tbsp orange juice
  • 3 tbsp butter or margarine - melted

Directions

Preheat oven to 400°F. Pour House-Autry Buttermilk Biscuit Mix into a bowl; set aside. In a separate bowl, mix sweet potatoes, brown sugar, nutmeg, cinnamon, pecans and orange juice together. Stir into dry mix to form soft dough. Turn onto lightly floured surface and knead 5 times. Roll to 1/2-inch thickness; cut with 2-inch biscuit cutter. Bake for 12-15 minutes or until done. Brush tops of hot biscuits with melted butter.

Don't have orange juice? Use milk or water.
