Sweet Potato Biscuits

Cut biscuit in half and insert a slice of cooked country ham. Serve with Molasses Mustard: Combine 1 tbsp molasses with 1/4 cup Dijon mustard; mix well and spread on biscuit halves. What a great breakfast sandwich or Game Day treat!!

Buttermilk Biscuit Mix
Ingredients
1/4 tsp nutmeg
1/4 tsp cinnamon
1 1/2 cups sweet potatoes, cooked and mashed
2 tbsp brown sugar
1/3 cup milk
butter or margarine, melted
Directions: 

Preheat oven to 400°F. Mix together House-Autry Buttermilk Biscuit Mix, nutmeg and cinnamon; set aside. In a separate bowl, mix together sweet potatoes, brown sugar and milk; stir into dry mix to form a soft dough. Turn onto a lightly floured surface and knead 5 times. Roll to 1/2-inch thickness; cut with 2-inch biscuit cutter. Bake for 12-15 minutes or until bottom edges are light golden brown. Brush tops of hot biscuits with melted butter. Enjoy. Yield: 12 biscuits.
