Summer Salad with Fish Nuggets

These baked fish nuggets, made with our oven-baked pork seasoned coating mix, make an excellent topping for a fresh salad.

Ingredients

  • 1 (6-ounce) box House-Autry Oven-Baked Pork Seasoned Coating Mix
  • 1 pound white fish, cut into bite sized pieces
  • 1 (10-ounce) bag romaine lettuce
  • 4 small cucumbers, peeled & sliced into rounds
  • 1/2 red onion, thinly sliced
  • 2 large Roma tomatoes, cut into cubes
  • 4 ounces feta cheese crumbles
  • 1/2 cup Greek vinaigrette salad dressing

Directions

Place House-Autry Oven-Baked Pork Seasoned Coating Mix and fish nuggets into a resealable plastic bag; seal shut and shake to coat. Remove fish from bag and place on a foil-lined baking sheet. Discard remaining coating mix. Cook in a 400°F preheated oven for 10 minutes, or until fish is cooked throughout.

To serve: In a large bowl, drizzle half the dressing on lettuce; toss to lightly coat. Arrange cucumbers, tomatoes and onions on top; drizzle with remaining dressing. Top with flounder strips and cheese. Serve immediately.
