Summer Salad with Fish Nuggets (COJ Video)

Southern Baked for Pork
Ingredients
1 (6-ounce) box Southern Baked for Pork
1 pound white fish, cut into bite sized pieces
1 (10-ounce) bag romaine lettuce
4 small cucumbers, peeled & sliced into rounds
1/2 red onion, thinly sliced
2 large Roma tomatoes, cut into cubes
4 ounces feta cheese crumbles
1/2 cup Greek vinaigrette salad dressing
Directions: 

Place House-Autry Southern Baked for Pork and fish nuggets into a resealable plastic bag; seal shut and shake to coat. Remove fish from bag and place on a foil-lined baking sheet. Discard remaining breader. Cook in a 400°F preheated oven for 10 minutes, or until fish is cooked throughout.

To serve: In a large bowl, drizzle half the dressing on lettuce; toss to lightly coat. Arrange cucumbers, tomatoes and onions on top; drizzle with remaining dressing. Top with flounder strips and cheese. Serve immediately.
