Smoky Fried BBQ Chicken

When you want to practice your pitmaster skills, this is a great recipe to try. Breaded with our Chicken Seasoned Breading Mix and slathered in barbecue sauce, this will always be a crowd-pleaser.

Ingredients

  • 4 cups House-Autry Chicken Seasoned Breading Mix
  • 8 chicken leg quarters
  • Favorite woodchips (we used applewood)
  • 1 quart buttermilk
  • 1/2 gallon of frying oil
  • 2 cups of a thin ketchup based BBQ sauce, such as Bone Suckin' Sauce or Cackalacky Cheerwine
  • Salt and fresh black pepper

Directions

Light your grill or smoker and preheat to 225 degrees F for a smoker or low heat for a gas grill. Add wood chips as your grill directs for smoking. Place the leg quarters in the grill and smoke for about an hour and a half or until the chicken is almost done, about 150 degrees F internally. While the chicken is smoking, take two medium bowls and pour the buttermilk in one and the chicken breading mix in the other. When the chicken is ready, pull off the grill and immediately place the chicken in buttermilk, then toss in the chicken breading mix. You can immediately fry the chicken or wait up to an hour. Fry until golden and crispy, usually about 7-8 minutes per side, or until the internal temperature is 165 degrees F. Move the chicken to a platter and baste with the BBQ sauce or dunk the chicken in a bowl filled with sauce.

Chef Tip: To grill, set up the grill for indirect cooking (for charcoal, place all the coals on one side; for gas, turn off a burner). Sear the chicken over the direct heat, then move to the indirect portion on the grill and continue cooking until 150 degrees F internally.
