“Say Cheese” Yeast Cornbread

Self-rising corn meal mix and dry yeast ensure a light, fluffy cornbread.

Ingredients

  • 1 cup White Self-Rising Corn Meal Mix
  • 1/4 ounce (1/2 package) dry yeast
  • 1/2 cup warm water (105-115 degrees F)
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1 large egg, slightly beaten
  • 2 tbsp oil or melted shortening
  • 1/2 cup warm evaporated milk, undiluted
  • (105-115 degrees F)
  • 1/2 cup sharp cheddar cheese

Directions

Preheat oven to 400°F. Add yeast to warm water; stir. Add sugar; stir and set aside. Sift together corn meal, flour and salt; set aside. Combine beaten egg, oil, warmed evaporated milk and yeast mixture. Add to dry ingredients; beat well. Stir in cheese. Pour batter into a well-greased baking pan. Cover and let stand in a warm place for 20 minutes. Bake 25 minutes, or until well browned.
