"Say Cheese" Yeast Corn Bread

It's very important to dissolve your yeast in water that is the right temperature - under 105 degrees it will not activate, over 115 degrees the heat will kill it.

White Self-Rising Corn Meal Mix
Ingredients
1/4 ounce (1/2 package) dry yeast
1/2 cup warm water (105-115 degrees F)
1/2 tsp sugar
1/2 tsp salt
1 large egg, slightly beaten
2 tbsp oil or melted shortening
1/2 cup warm evaporated milk, undiluted (105-115 degrees F)
1/2 cup sharp cheddar cheese
Directions: 

Preheat oven to 400°F. Add yeast to warm water; stir. Add sugar; stir and set aside. Sift together corn meal, flour and salt; set aside. Combine beaten egg, oil, warmed evaporated milk and yeast mixture. Add to dry ingredients; beat well. Stir in cheese. Pour batter into a well-greased baking pan. Cover and let stand in a warm place for 20 minutes. Bake 25 minutes, or until well browned.
