Roasted Pork and Vegetable Kabobs

Since vegetables and meat cook at different times, adjust the sizes that you cut them to assure even cooking.

Southern Baked for Pork
Ingredients
1 1/4 pounds pork tenderloin, cut into bite-sized pieces
1 red onion, cut into large wedges
2 large red potatoes, halved, then quartered
1/2 pint cherry tomatoes
Nonstick cooking spray
10 wooden skewers
Directions: 

Spray pork and vegetables with nonstick cooking spray; separate and set aside. Pour Southern Baked for Pork into a medium bowl. Working in batches, dredge pork, potatoes, and onion wedges until well coated. Divide evenly among 10 skewers, alternating the pork, potato, onion and tomato. Place skewers onto a foil-lined or lightly greased baking sheet. Bake for 30 minutes, turning halfway through cooking.
