Peanut Butter Cookies

Microwave your peanut butter for 10-20 seconds and it will easily pour into a measuring cup.

Buttermilk Biscuit Mix
Ingredients
1 1/4 cups peanut butter
1 (14-ounce) can sweetened condensed milk
1 tsp vanilla
1/4 cup granulated sugar or turbinado sugar
Directions: 

Preheat oven to 375°F. In a large bowl, combine peanut butter with sweetened condensed milk; mix until smooth. Stir in House-Autry Buttermilk Biscuit Mix and vanilla; blend well (mixture will be crumbly).

Use a tablespoon of dough for each cookie; roll into a small ball approximately 1-inch in diameter. Coat each ball in sugar and place on an ungreased cookie sheet. Flatten slightly with the back of a fork. Bake cookies for 5 to 7 minutes, or until bottoms are light golden brown. Cool completely. Yield: 4 dozen cookies
