Parmesan and Herb Cornbread

Italian seasoning and shredded parmesan cheese give this cornbread recipe a Mediterranean twist.

Ingredients

  • 1 package (8-ounces) House-Autry Buttermilk Cornbread Mix
  • 3/4 cup shredded parmesan cheese, divided
  • 1 tsp Italian seasoning
  • 2 large eggs, beaten
  • 1 cup milk
  • 2 tbsp butter, melted

Directions

Preheat oven to 400°F. Lightly spray a 1-quart loaf pan with nonstick cooking spray. In a medium bowl, whisk together the House-Autry Buttermilk Cornbread Mix, 1/2 cup of parmesan cheese, and the Italian seasoning. Make a well in the center and add the eggs, milk and butter. Using a spoon, gradually incorporate the dry ingredients into the liquid ingredients; mix until smooth. Pour mixture into prepared pan. Top evenly with remaining parmesan cheese. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before turning out onto a cooling rack to cool completely. Cut into thick slices.
