Oven-Fried Garlic Chicken
Parsley, parmesan and garlic give this dish an Italian flair that dresses up “ordinary” baked chicken.
- 1 box House-Autry Oven-Baked Chicken Seasoned Coating Mix
- 2/3 cup grated parmesan cheese
- 1/4 cup minced italian parsley
- 4 tbsp butter
- 4 tbsp olive oil, plus extra if necessary
- 6 garlic cloves, minced
- 1 3-pound chicken, cut in serving pieces, or 3 pounds assorted chicken pieces
Preheat oven to 350°F. In pie plate, blend together House-Autry Oven-Baked Chicken Seasoned Coating Mix, Parmesan cheese and parsley. Skin chicken pieces, if desired. In small saucepan, heat butter, olive oil and garlic over very low heat, just until butter melts. Remove from heat. Roll chicken pieces in butter mixture, then roll in coating mix. Place chicken skin-side up in 9x 13-inch baking pan. Mix any remaining coating mix with the garlic butter mixture (adding more olive oil to moisten, if needed), and sprinkle evenly over chicken pieces. Bake 1 hour.
