Peel onion and cut into 1/4-inch slices and separate into rings. Prepare a batter by mixing 3/4 cup of House-Autry Onion Ring Coating Mix with 1/2 cup water. Blend until smooth with a wire whisk. Pour remaining House-Autry Onion Ring Coating Mix in separate bowl. Dip onion rings in batter and then coat with dry mix. Fry in 375°F oil until golden brown. Drain on paper towel.
Vegetable Dip: Mix together 8 ounces sour cream, 3/4 cup mayonnaise, 1 tbsp onion powder, 1 tbsp parsley, 1 tsp dill week and 1 tsp garlic salt, Chill and serve as a delicious dipping sauce.
