Oatmeal Coffee Cake

Brown sugar, cinnamon and nutmeg give this coffee cake great flavor without being too sweet.

Ingredients

  • 2 cups House-Autry Buttermilk Biscuit Mix 8 oz (this recipe requires 2 boxes of Biscuit Mix to complete)
  • 1 cup quick-cooking oats
  • 1 1/4 cups boiling water
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 tbsp oil
  • 1 tbsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 stick butter or margarine
  • 1 cup brown sugar
  • 1 cup chopped nuts
  • 1 egg
  • 1 cup coconut

Directions

Preheat oven to 350°F. Mix oatmeal and water together; stir and allow mixture to cool. Cream eggs, sugars and oil together. Add cooled oatmeal to egg mixture and mix well. Mix cinnamon and nutmeg with House-Autry Buttermilk Biscuit Mix. Add to egg/oatmeal mixture. Add vanilla. Do not over mix. Pour into a 9 x 13-inch cake pan. Bake for 25-30 minutes.

Topping: Melt butter and mix all ingredients together. Pour topping over cake and broil about 2-3 minutes.
