Italian Breaded Pork Chops

Pesto sauce and an Italian cheese blend are the extra ingredients that give these pork chops a unique flair.

Ingredients

  • 1 cup House-Autry Pork Seasoned Breading Mix
  • 4 pork loin chops, about 1-inch thick
  • 2/3 cup mayonnasie
  • 3 tbsp pesto sauce
  • 1 pound asparagus
  • 6 ounces Italian 4-cheese blend
  • 1 box rice
  • 2 tbsp butter
  • 2 ounces roasted almonds

Directions

Preheat oven to 375°F. Slice center of chop, to form a pocket, and stuff 1 tsp pesto in center, along with 3/4 ounces cheese. Close with toothpick, then lightly bread with mayonnaise and season liberally with House-Autry Pork Seasoned Breading Mix. Cook chops on a lightly greased baking sheet for 20 minutes.

While pork chops are cooking, prepare rice according to package directions. Sauté asparagus in butter until done. Turn oven setting to broil and cook chops 3 minutes per side, until golden brown. Remove from oven and let cool while you place a bed of rice on serving plate. Place chops on rice; top with additional pesto, cheese and almonds. Dress the side of platter with the asparagus.
