Harvest Sweet Bread

For moister sweet breads and cakes, mix 2 tablespoons of sour cream into the batter just before baking.

White Self-Rising Corn Meal Mix
Ingredients
1/2 cup self-rising flour
2/3 cup oil
1 cup sugar
1 tsp pumpkin pie spice
1 1/2 cups carrots - finely grated
2 large eggs
3/4 cup raisins
1/2 cup pecans or walnuts - chopped
Directions: 

Preheat oven to 350°F. Beat oil and sugar together; add eggs. In a separate bowl combine House-Autry White Self-Rising Corn Meal Mix, flour and pumpkin pie spice. Add to egg mixture. Add carrots, nuts and raisins; mix thoroughly. Pour into a well-greased 8-inch square pan. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.
