Glazed Orange Pound Cake

A light glaze gives the perfect amount of sweetness to this pound cake, made with House-Autry Buttermilk Biscuit Mix.

Ingredients

  • 1 package House-Autry Buttermilk Biscuit Mix 8 oz
  • 2/3 cup sugar
  • 1/3 cup butter, melted
  • 2 large eggs
  • 2/3 cup milk
  • 1 tsp vanilla
  • 2 tbsp orange zest, grated
  • 1/2 cup powdered sugar
  • 1 tbsp orange juice

Directions

Preheat oven to 325°F. Grease an 9 x 5 x 3-inch loaf pan with nonstick cooking spray; lightly dust with flour. In a large mixing bowl, combine first 6 ingredients; beat at medium speed until well combined, about 3 minutes. Fold in orange zest. Pour into prepared pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Cool 10 minutes before removing from pan. Cool completely before glazing.

Glaze: Combine powdered sugar and orange juice; stir until smooth. Pour over cooled cake.

Chef Tip:

Try a slice for breakfast - toasted, with a little cream cheese, or butter and orange marmalade.
