Garlic and Herb Roasted Dinner Potatoes
Pork seasoned coating mix gives these potatoes a flavorful, crunchy finish.
- 1/3 cup House-Autry Oven-Baked Pork Seasoned Coating Mix
- 12 medium red potatoes
- 2 ounces (1/2 stick) butter, softened
- 1 tsp parsley flakes
- 1/2 tsp garlic salt
Wash and scrub potatoes. Peel the top halves and carefully cut 1/8-inch slits in potatoes, approximately 3/4 of the way through - leaving the potato whole, with an accordion-like appearance. Submerge cut potatoes in ice water and refrigerate for at least 30 minutes.
In a small bowl, combine 2 tablespoons House-Autry Oven-Baked Pork Seasoned Coating Mix, butter, parsley and garlic salt; mix well and set aside. Remove potatoes from refrigerator and drain well. Place on a plate and microwave on the highest setting for 10-12 minutes, turning halfway through cooking. (Potatoes should not be completely cooked.) Cool slightly.
Preheat oven to 425°F. Once potatoes are cool enough to handle, smear butter mixture over the tops, separating the cuts slightly to ensure butter melts into the slits. Sprinkle with remaining coating mix. Place on a baking sheet that has been covered with aluminum foil and sprayed with nonstick cooking spray. Bake 20-25 minutes, or until potatoes are soft in the middle and golden crunchy on the top. Serve immediately.
