Fried Summer Squash Panini

Ingredients
2 large zucchini
2 large yellow summer squash
1 cup Italian dressing
3 cups oil for frying
1/3 cup pesto
1 loaf Italian bread, sliced
1/2 cup roasted red or yellow peppers, sliced
1/2 small red onion, thinly sliced
4 ounces goat cheese
salt and pepper to taste
Directions: 

Thinly slice the squash lengthwise. Dip in dressing and then dredge in House-Autry Chicken Breader. Fry until golden brown in oil. Spread a teaspoon of pesto on a slice of bread. Add veggies, a couple pieces of roasted red pepper, and some red onion. Crumble about 1 teaspoon of goat cheese on top. Sprinkle with salt and pepper to taste. Top with second piece of bread and grill on a Panini maker until toasted. Serve warm.
