Fried Stuffed “Gator” Peppers

Finely chopped gator meat is the perfect filling for this unique appetizer. Two of our flavorful breading mixes work together for the ideal coating.

Ingredients

  • 2 tsp House-Autry Medium-Hot Seasoned Breading Mix
  • 1 cup House-Autry Chicken Seasoned Breading Mix
  • 4 large sweet banana peppers (seeded)
  • 1 pound gator, chopped fine
  • 2 tbsp onion, chopped
  • 2 tbsp cooking oil
  • 3 1/2 ounces pineapple cream cheese spread
  • 6 ounces pepper jack cheese
  • 3 eggs, beaten
  • ranch dressing (optional)
  • oil for frying

Directions

Saute' gator and onions with 2 tsp of House-Autry Medium-Hot Seasoned Breading Mix for 5 minutes in the 2 tablespoons oil; drain on a paper towel. Combine the gator mixture with the cream cheese and pepper jack cheese. Stuff the cleaned peppers with the mixture. Heat oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350°F, or fill your deep fryer to the fill line according to the directions. Dip peppers in egg, then dredge in House-Autry Chicken Seasoned Breading Mix. Fry until golden. Enjoy! Serve with ranch dressing (optional).
