Fish Cakes

I like to buy premade mashed potatoes for this dish.

Seafood Breader
Ingredients
12 oz white fish - cooked and flaked
1 large baked potato
3 scallions - diced
1 medium jalapeno pepper - minced
1/2 medium bell pepper - diced
1/2 medium onion - diced
2 tbsp mayonnaise
1 large egg - beaten
1 lemon - juiced and zested
dash red pepper flakes
salt and pepper to taste
Directions: 

Combine fish, potato, scallions, peppers, onion, mayonnaise and egg with 1/3 cup House-Autry Seafood Breader. Mix thoroughly. Stir in remaining ingredients; shape into 10 patties and coat with remaining breader. Cook in 1/8-inch hot oil for 6-7 minutes, turning halfway through cooking.
