Down East Shrimp Po-Boys with Hampstead Sauce

Chesapeake Bay seasoning and bleu cheese crumbles give this po-boy recipe its decadent flavor.

Ingredients

  • 1 box House-Autry Seafood Seasoned Breading Mix
  • 1 pound shrimp, peeled and deveined
  • 4 hoagie rolls (or other sub-type fresh bakery roll)
  • 4 large slices cheese of your choice
  • 1 tbsp Chesapeake Bay seasoning
  • 1 egg
  • 2 tbsp milk
  • 3/4 cup vegetable or canola oil
  • bleu cheese crumbles
  • 5 tbsp mayonnaise
  • 1 tbsp sweet relish
  • 1 tsp Chesapeake Bay seasoning

Directions

Preheat oven to 350°F. In a resealable plastic bag, mix together the House-Autry Seafood Seasoned Breading Mix with the Chesapeake Bay seasoning. Shake the bag to mix.

In a small bowl, mix together the egg and milk. Drop the shrimp in egg mixture and toss until completely coated. Shake excess egg off shrimp and drop them into the plastic bag. Shake well so that all the shrimp are coated with the House-Autry Seafood Seasoned Breading Mix.

In a pan (a wok works great), heat the oil to almost boiling. Cook the shrimp in batches until golden brown and crispy, about 3-4 minutes. Gently turn several times while cooking. Once cooked, move shrimp to a paper towel to drain and cover with foil to keep warm.

While the shrimp is cooking, slice the rolls and layer each with cheese. Bake in oven about 10 minutes, depending on the type of roll used. Remove from oven when bread just starts to get crispy and the cheese has melted.

As the shrimp is cooking and the rolls are in the oven, it's time to quickly make the Hampstead Secret Sauce! In a small bowl, combine the mayo, relish, and 1 tsp of Chesapeake Bay seasoning. Mix well.

Remove rolls from oven and liberally spread the Hampstead Secret Sauce on each roll. As soon as all shrimp is cooked, evenly split the shrimp and pile onto all four Hoagie rolls, even letting some spill over onto the plate. Garnish with bleu cheese crumbles.
