Place rice, salt and water into a saucepan. Bring to a boil; reduce heat to a simmer, cover and let steam for 20 minutes.
Meanwhile, in a large skillet, combine sausage, onion, celery, scallion and bell pepper; cook over medium heat until sausage has browned and vegetables are tender, about 5 minutes. Drain mixture and sprinkle with House-Autry Medium Hot Breader. Cook for 5 minutes, stirring constantly to prevent sticking. Fluff rice with a fork and add to sausage mixture along with the black pepper; mix well. Serve immediately.
