Preheat oven to 425°F. Brush chops with Dijon mustard before coating. Pour one packet of House-Autry Southern Baked Pork coating mix into a resealable plastic bag. Moisten 8 - 10 (1/2-inch thick) bone-in or boneless pork chops with water. Shake moistened chops, 1 to 2 pieces at a time, in bag to coat. Discard remaining mix. Place coated chops on lightly greased or foil-lined baking sheet. Bake boneless and bone-in pork chops for 15 to 20 minutes or until cooked through. Bake thicker chops 5 to 10 minutes longer or until cooked through.

Try using coarse grain Dijon mustard in this recipe instead of regular Dijon. The contrast of textures is nice.
