Deep Fried Vegetables

Fried vegetables not only make an excellent side dish, but a tasty and attractive appetizer, too. Try cutting the vegetables into different shapes: squash in rounds, zucchini in 3-inch strips, whole or halved mushrooms, etc.

Ingredients
2 pounds assorted vegetables: onions, okra, squash, eggplant, mushrooms or potatoes
1 cup buttermilk
Oil for frying
Directions: 

Preheat oil to 375°F. Cut vegetables into ¼-inch slices. Moisten with buttermilk, shaking off excess. Coat vegetables by shaking in a plastic bag or rolling on a plate in House-Autry Chicken Breader. Deep-fry onion rings, okra, zucchini or squash for 1-2 minutes. Deep-fry eggplant, mushrooms and potatoes for 5-6 minutes.

Meal Suggestions: 

Try dipping Deep Fried Vegetables in a Curry Vegetable Dip. Combine 1 cup mayonnaise, 1 tbsp honey, 1 clove minced garlic, 1 tbsp lemon juice, 1/2 tsp ground ginger and 2 tsp curry powder. YUM!!
