Heat oil in heavy cast iron skillet to 375°F. Make sure oil fills up no more than a quarter of your skillet. You want the oil to only cover about half of your pork chops, so if you're using a 2-inch deep skillet, you'd need about 1/4 inch of oil in the bottom. To check temperature, sprinkle a little breader mix in hot oil. If it bubbles up golden brown, you're ready to cook.
Take some of the Pork Breader and pour it onto a large plate. Take each chop, dip it in the water, shake off excess, and roll it in the breader on the plate, covering each side thoroughly. You can also put the chops in a large re-sealable bag with the breader and shake to coat.
Place coated chops in the heated oil carefully - leaving plenty of room around them for the oil to flow. Fry for 5-8 minutes until golden brown. Use wire racks and paper towels to drain excess oil.
