Creamy Corn Casserole

Hushpuppy Mix with Onion
Ingredients
1 (8-ounce) package Hushpuppy Mix with Onion
1 (15.25-ounce) can whole kernel corn, drained
1 (14.75-ounce) can cream style corn
2 large eggs, well beaten
1 cup sour cream
1 stick (4-ounces) butter, cut into pieces
1/4 cup scallions, chopped
1 cup cheddar cheese, shredded
Directions: 

Preheat oven to 350°F. Put butter in a 2-quart baking dish; place in oven to melt, about 3 minutes. Remove from oven and swirl melted butter to evenly coat casserole dish. Pour excess butter in a mixing bowl with the corn, eggs, sour cream, House-Autry Hushpuppy with Onion Mix and scallions. Mix well. Pour into prepared dish. Bake until lightly browned, about 30 minutes. Remove from oven and sprinkle cheese over top. Return to oven for 20 minutes.
