Crazy Crab and Corn Fritters
With crabmeat, corn and jalapeño, these fritters will always be a crowd-pleaser.
- 1 8-ounce package House-Autry Hushpuppy Mix with Onion
- 1 6-ounce can fancy lump crabmeat, drained
- 1 7-ounce can whole kernel corn, drained
- 1/2 jalapeño pepper, minced
- 1 cup water
- oil for frying
Mix House-Autry Hushpuppy with Onion Mix and water; stir well and let stand 5 minutes. Gently fold in jalapeño, corn and crab. Using a cookie scoop, drop batter into oil preheated to 350°F or a deep fryer. Cook for 2-3 minutes or until golden brown. Makes approximately 35 fritters.
