Cornbread Salad

Deli ham, House-Autry cornbread, a few veggies and ranch dressing make for a simple but delicious meal for lunch or dinner.

Ingredients

  • 1 8-ounce box House-Autry Buttermilk Cornbread Mix
  • 1/2 cup cooked ham or turkey, cut into cubes
  • 1/2 cup cheese, cubed or shredded
  • 1/2 cup red onion, diced
  • 1 cup bell pepper, diced
  • 1/2 cup tomatoes, diced
  • Ranch salad dressing to taste

Directions

Preheat oven to 425°F. Prepare cornbread according to package directions. Cool to room temperature. Tear cornbread into pieces and place in a large mixing bowl. Add ham or turkey, cheese and all of the vegetables except the tomatoes. Pour some of the salad dressing over the top and gently toss to combine. Refrigerate for 2-4 hours. Just before serving, add tomatoes and toss again. Serve immediately.
