Season both sides of the chicken breasts with sage. Top with ham on the smooth side. Place chicken into a resealable plastic bag; seal and gently pound with flat side of meat mallet until 1/4-inch thick. In a shallow dish, mix House-Autry Chicken Breader and parmesan cheese. Coat chicken with mixture.
Heat vegetable oil over medium-high heat in a nonstick pan. Add chicken and cook approximately 4 minutes per side, until nicely browned and no longer pink in the middle. Sprinkle with optional mozzarella cheese if desired. Remove chicken and cover loosely with aluminum foil.
Increase heat to high. Add broth to skillet to deglaze pan. Stir constantly until broth has reduced by half. Remove from heat and swirl in butter. Pour over chicken and serve immediately.

1 tbsp sage
4 boneless, skinless chicken breasts (5 to 6 ounces each)
2 tbsp parmesan cheese
2 tbsp vegetable oil or olive oil
4 pieces country ham or proscuitto, thinly sliced
3/4 cup chicken broth
1 tbsp butter
1/4 cup mozzarella cheese (optional)

I like to serve this with mashed sweet potatoes. The sweetness is a nice contrast to the saltiness of the chicken. Add a nice green vegetable and dinner is done!
