Place a piece of plastic wrap over chicken breasts before flattening. This will keep the meat from tearing or bruising.

Ingredients
4 boneless skinless chicken breasts
4 slices deli ham
4 slices Swiss or mozzarella cheese
Directions: 

Preheat oven to 400°F. Flatten chicken breast to ¼-inch thickness. Place a ham slice and cheese slice in center of each chicken breast. Roll each breast up, securing with a toothpick or thin metal skewer. Brush chicken with water. Roll in House-Autry Southern Baked Chicken Coating Mix. Bake for 20-30 minutes (depending on size), or until cooked through.

Try Chicken Cordon Bleu with a nice Mustard Cream Sauce. Melt 1 tbsp butter in a heavy saucepan over medium heat. Add 1 tbsp flour. Cook for 1-2 minutes. Gradually add 1 cup warm milk; stir until sauce thickens. Add 1-2 tbsp Dijon mustard; mix well. Season with salt and white pepper; drizzle over chicken.
