Cheddar and Scallion Cornbread Muffins

Sharp cheddar cheese and scallions give this cornbread muffin recipe added flavor.

Ingredients

  • 1 (8-ounce) pkg House-Autry Sweet Yellow Cornbread Mix
  • 3/4 cup milk or water
  • 2 tbsp scallions, chopped
  • 1/2 cup sharp cheddar cheese, shredded

Directions

Preheat oven to 425°F. Grease 9 cups in muffin pan. Combine cornbread mix and water or milk in a small bowl; stir until moistened. Fold in scallions and cheese. Divide batter evenly into cups. Bake for 10-12 minutes or until light golden brown.
