Carolina Crab Cakes

Serve with a spicy Chipotle Mayonnaise. Combine 1 cup mayonnaise, 1 tbsp chipotle peppers in adobo sauce, 1 tsp sugar and the juice of a lime.

Seafood Breader
Ingredients
2 cups fresh crabmeat - drained
1 small egg - beaten
1/4 cup mayonnaise
3 tbsp scallions - minced
2 tsp hot sauce
1 tsp dried parsley
2 tbsp celery - minced
1/2 tsp dried dill
Directions: 

Combine all ingredients until thoroughly mixed. Shape into approximately 8 patties, then coat with additional House-Autry Seafood Breader. Cook over medium-high heat in 1/8-inch hot oil 5 minutes, turning halfway through cooking.

Meal Suggestions: 

Fresh crabmeat from your local fish market can be expensive – I purchase mine at the grocery store instead. You can make this recipe using 2 cans (6-ounces each) fancy lump crabmeat and an 8-ounce package of imitation crab. Make sure it is well drained. Chop the imitation crabmeat into pieces approximately twice the size of the canned. Your guests will never know the difference!
