Broccoli and Cheese Cornbread

Broccoli and cheddar cheese go together perfectly, and when added to our cornbread mix, make for a great side dish.

Ingredients

  • 1 pkg (8-ounces) House-Autry Buttermilk Cornbread Mix
  • 3/4 cup milk
  • 2 large eggs
  • 1/2 stick (2-ounces) butter, melted
  • 1/4 cup onions, chopped
  • 1 10-ounce pkg frozen chopped broccoli, thawed and drained
  • 3/4 cup shredded sharp cheddar cheese

Directions

Preheat oven to 425°F. In a large bowl, combine milk and eggs. Stir in House-Autry Buttermilk Cornbread Mix; add butter and mix well. Fold in onions, broccoli and cheese. Pour into a well greased cast iron skillet and place in oven. Cook for 25-30 minutes, or until a toothpick inserted into center comes out clean.
