Preheat oven to 350°F. Lightly grease the bottom of a 9x13-inch baking dish. Distribute the cooked sausage evenly in the bottom of dish. In a large cup, mix House-Autry Onion Hushpuppy Mix, 1 cup milk, sour cream and ¼ tsp dry mustard. In a separate bowl, combine eggs, cheese, 2 cups milk, salt, 1 tsp dry mustard and pepper; stir well. Pour egg mixture on top of sausage. Pour hushpuppy mixture evenly over casserole. Bake casserole for 40 to 45 minutes or until eggs are set.
Breakfast Casserole

After draining the sausage, rinse it in water. The flavor will still be there but the excess fat will be gone. Or, substitute chicken or turkey sausage for the pork. This is a hearty casserole for any time of day. Plus, it reheats nicely.
