Blue Tick Hound Puppies

Plain Hushpuppy Mix
Ingredients
2 tbsp sugar
1 cup water
1 1/2 tsp vanilla
1 cup blueberries
Vegetable oil for frying
1 cup powdered sugar, plus more for dusting
1 tbsp lemon juice
1/2 tsp vanilla
1 1/2 tbsp water
Directions: 

Puppies: Combine hushpuppy mix and sugar in a large mixing bowl. Add water and vanilla, mixing well. Gently fold in blueberries, and then let batter rest for 5 minutes.
In a heavy, deep frying pan, heat oil over medium-high heat to 375°F. Drop batter by teaspoonfuls into the hot oil and fry for 3 minutes or until golden brown. Remove puppies from oil to a wire rack or paper towel-lined platter. Sprinkle with confectioners’ sugar before serving.
Glaze: Combine confectioners’ sugar, lemon juice and vanilla in a medium bowl. Add enough water to create a loose glaze. Serve alongside puppies.
